Ingredients:

  • 500g of Bee Hoon (Rice Vermicelli)
  • 200g of Straw Mushrooms
  • 200g of Chinese Spinach
  • 50g of Dried Prawns
  • 2 Eggs
  • 100g of Fishcake
  • 150g of Spiced Pork Cubes (Canned Food)
  • 3 cloves of Garlic, minced
  • 1 Onion, sliced thinly
  • 2 Red Chilies, sliced thinly
  • 2 tbsp of Soy Sauce
  • 1 tbsp of Oyster Sauce
  • 1 tsp of Dark Soy Sauce
  • 1 tsp of Sugar
  • 1 tsp of Salt
  • 1/2 tsp of Ground Black Pepper
  • 2 tbsp of Vegetable Oil
  • 2 stalks of Spring Onions, chopped

Instructions:

  1. Cut the Chinese Spinach into 1 inch lengths and wash the vegetables and drip dry.
  2. Take the bee hoon and soak it in a large bowl of Cold water for about 15 minutes until they are softened. Drain the water and set aside. (Do NOT use hot water, as it may cause the bee hoon to break up when frying.
  3. Using a Big Wok, heat vegetable oil over medium heat. Throw in the garlic, onion, and red chilies and lightly fry it about 2 minutes until fragrant smell comes out.
  4. Add dried prawns fry till fragrant smell comes out, taking care not to burnt it.
  5. Add in the spiced pork cubes and stir-fry for about 3 to 4 minutes until the pork is cooked through.
  6. throw in the fishcake and straw mushrooms and stir-fry for another 2-3 minutes.
  7. Add the bee hoon to the pan and stir-fry for about 5 minutes until the noodles are heated through.
  8. Add in the Chinese spinach and stir-fry all the ingredients till the spinach becomes cooked and shrinks down.
  9. Add the soy sauce, oyster sauce, dark soy sauce, sugar, salt, and ground black pepper to the pan and mix well.
  10. crack the eggs into the wok and mix them well into all the ingredients.
  11. Continue to stir-frying for another 2-3 minutes until the noodles are evenly coated with the sauce.
  12. Garnish the dish with chopped spring onions and serve hot.
